In article number 2101749, Constantinos V. Nikiforidis and co-workers report that an adhesive self-assembled protein particle from peas can glue together oil droplets in jammed emulsions and directly be used for 3D printing. The addition of the pea protein particles cross-links the oil droplets, leading to a scaffold with elastoplastic rheological properties.
